Ingredients:

  • 1 cup rolled oats

  • 1/2 tsp vanilla extract

  • Pinch sea salt

  • 2 cups unsweetened almond milk

  • 1 apple, cored and chopped into 1/4 in dice

  • 1/2 tsp cinnamon

  • 2 tbsp walnuts, chopped

  • 1 tbsp maple syrup to sweeten (optional)

  • 1 tbsp flaxseeds

  1. Place the oats, vanilla, maple syrup (optional), and almond milk in a heavy bottomed saucepan and bring to a boil. Stir well to mix.

  2. As oatmeal starts to boil, lower the heat to a simmer, cover with a lid, and let the oatmeal cook, stirring frequently, for about 15 minutes. If the oatmeal gets too dry, add some water or almond milk.

  3. When the oatmeal is smooth and creamy, turn off the heat. Stir in the walnuts and cinnamon.

  4. Ladle out into bowls, sprinkle on the flaxseeds. Serve immediately.
