
Traditional Italian Dressing
Description: An easy Italian dressing made with a white bean base, adding extra nutrition to your veggies.

Ingredients:

¾ cup cooked white beans, drained and rinsed (if using canned)

¼ cup water (or more if needed)

2 tbsp fresh lemon juice

1 garlic clove, chopped

1½ tablespoons shallots, chopped

1 tsp onion powder

½ teaspoon dried oregano
-
Salt and pepper to taste

1 tablespoon fresh parsley, chopped

1 tsp maple syrup (optional)
Directions:

Rinse fresh parsley and let sit until dry.

Place all the ingredients in a blender or food processor. Process until smooth.

Taste and adjust seasonings adding a little more parsley or water if needed.
