Traditional Italian Dressing

Description: An easy Italian dressing made with a white bean base, adding extra nutrition to your veggies.

Ingredients: ​​

  • ¾ cup cooked white beans, drained and rinsed (if using canned)

  • ¼ cup water (or more if needed)

  • 2 tbsp fresh lemon juice

  • 1 garlic clove, chopped

  • 1½ tablespoons shallots, chopped

  • 1 tsp onion powder 

  • ½ teaspoon dried oregano

  • Salt and pepper to taste 

  • 1 tablespoon fresh parsley, chopped 

  • 1 tsp maple syrup (optional) 

Directions: ​​​​

  1. Rinse fresh parsley and let sit until dry. 

  2. Place all the ingredients in a blender or food processor. Process until smooth.

  3. Taste and adjust seasonings adding a little more parsley or water if needed.
