Simple Pita Pizza
If you're looking for a quick and healthy plant-based dinner try this easy, veggie topped pita pizza.

Ingredients:

2 whole wheat pita bread

1/4 cup marinara sauce
-
1 tomato, sliced

2 button mushrooms, sliced

1/2 zucchini, sliced
Toppings:
-
1/4 cup spinach
-
1/2 avocado, sliced
-
1/2 tsp oregano
-
1 tsp nutritional yeast
Directions
1. Set oven to broil.
2. Slice thin slices of zucchini and mushrooms. Put mushrooms and zucchini on a baking sheet and place in the oven for 4 minutes or until lightly browned.
3. Place pita bread on a baking sheet. Top pita bread with marinara sauce tomato slices. Remove zucchini and mushrooms from the oven and add to pizza.
4. Set oven to 425 degrees. Place pizzas in oven for 8-10 minutes or until pita bread is crispy.
5. Remove from oven. Add spinach, avocado, oregano and nutritional yeast to pizza. Enjoy!
